Chef Giovanni Farruggio, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make octopus salad.
Ingredients:
1 ea. 3lb octopus
1 cup celery (half-moons)
1 cup red pepper (cut in strips)
1 cup yellow pepper (cut in strips)
1 cup olive oil
1 tbs garlic (minced)
2 lemons
¼ cup white balsamic vinegar
1 tsp oregano
1 tsp salt
½ tsp black pepper
1 tbs parsley (chopped)
1 tbs baking soda
Directions:
1. Fill a large sauce pot half way with water.
2. Add the baking soda and one lemon cut in half.
3. Bring water to a rolling boil.
4. Once water is at a boil, dip your octopus in the water three times, the third time letting go of the octopus submerging it in the liquid.
5. Immediately lower heat to a simmer.
6. Let simmer for 30-40 min. (or until slightly tender)
7. Remove the pot from heat and let the octopus sit in the hot liquid for an additional 30-40 min.
8. Remove the octopus from the water and let sit at room temp for an additional 30-40 min.
9. Remove the beak from the octopus (located at the base of the octopus where the tentacles meet)
10. Proceed to cut the octopus into small pieces and place in a bowl
11. Add the juice of one lemon, salt, and pepper.
12. Add all the remaining ingredients and toss until all are incorporated.
13. Chill and serve
