What's Cooking: Uncle Giuseppe's Maple Roasted Carrots
Maple Glaze - Ingredients:
½ cup honey
¼ cup real maple syrup
2 tbs whole grain mustard
2 tbs cider vinegar
½ tsp salt
Place all ingredients in a bowl and whisk until all ingredients are incorporated. Place contents of bowl in a sauté pan and bring to a simmer. Allow for glaze to reduce by half. Remove from heat and set aside.
Roasted Carrots - Ingredients:
3 bunch stem-on carrots
¼ cup extra virgin olive oil
1 tbs chopped chives
1 lemon (1/2 for juice, ½ for slices)
1 tbs kosher salt
1 tsp black pepper
Cut stem off carrot leaving 1 inch of stem intact.
Wash carrots thoroughly removing all dirt. Do not peel carrots.
Pre-heat oven to 500 degrees.
Place cleaned carrots on a parchment papered sheet pan. Drizzle with olive oil and season with salt and pepper.
Roast in oven for 20 minutes, remove from oven shake tray and place back in oven for additional 5-10 minutes. Carrots should almost look slightly burnt/charred.
Test one carrot for softness. Should have the consistency of a cooked sweet potato.
Remove carrots from oven and drizzle with the maple glaze
