What's Cooking: Uncle Giuseppe's Marketplace's flounder putanesca
Chef Vinny Olivieri, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make flounder putanesca.

Ingredients:

For the Flounder (or Fluke):
• 2) 6-8oz Flounder/Fluke fillets
• 1 tsp Kosher salt
• ½ tsp black pepper
• ½ cup seasoned bread crumbs
• ¼ cup white wine
• 2 TBS Uncle Giuseppe’s Extra-Virgin Olive Oil
For the Putanesca Sauce:
• 1 qt Uncle Giuseppe’s Marinara Sauce
• ½ pint cherry tomatoes cut in half
• ¼ cup cured black olives pitted
• 1-2 TBS chopped anchovy
• 2 TBS capers (small)
• 1-2 tsp crushed red pepper
For the Garnish:
• Lemon slices
• Chopped parsley

Directions

1. Pre-heat oven to 425*F.
2. Place bread crumbs, white wine, olive oil in a bowl and mix well.
3. Season flounder with salt and pepper then coat both sides of flounder fillets with bread crumb mixture, roll fish and set aside.
4. In a separate bowl mix together all Putanesca sauce ingredients.
5. Place sauce in an oven safe oval shaped casserole pan.
6. Place rolled flounder on top of sauce.
7. Place pan in oven for 20-25 minutes.
8. Remove from oven and garnish with lemon slices and chopped parsley.
