Ingredients:
6 yams
½ cup honey
¼ cup ginger balsamic glaze
2 tbs butter
½ cup olive oil
1 tbs salt
1 tsp black pepper
¼ cup dried cranberries
Directions:
Clean and cut yams into wedges, rounds and place in a bowl.
Add the oil salt and pepper to the yams and toss until well coated.
Place yams on a papered sheet pan skin side down and roast at 425 degrees for 20-25 minutes.
While the yams are roasting place all other ingredients into a sauté pan and bring to a simmer and let simmer for two minutes to let mixture reduce.
Once yams are cooked place on plate and drizzle the glaze on top.
