Ingredients:
1 large head cauliflower
4 strips bacon
4 cups water
2 tsp salt, divided
4 oz cream cheese
1/3 cup heavy cream
¼ tsp cayenne pepper
1 tsp paprika
2 cups shredded aged cheddar
Garnish with chives, more cheese and bacon crumbles
Directions:
Add water to medium sized sauce pot, bring to a boil.
Chop cauliflower into small pieces.
Add cauliflower to boiling water, add 1 tsp salt to water. Cook for 4-5 minutes, strain cauliflower, set aside.
Using the same pot, add heavy cream, cream cheese remaining salt, cayenne and paprika. Stir to combine all ingredients and allow to cook on low until all ingredients have incorporated and become smooth and thick (2-3 minutes).
Add cooked cauliflower and gently fold in shredded cheddar, then bacon.
Place on plate and garnish with minced chives, bacon crumbles and more cheese.
