On Tuesdays. We take you to some of the best restaurants in New Jersey today. I'm going to Somerville for tacos margaritas and more at salted lime bar and kitchen. We're here with head chef Katie Berry and she's gonna show me how to make tacos but Katie not just any tacos. What are we making? We're making queso bia tacos. All right. What does that look like? All right. So first we're gonna take, we've got some seasoned beef fat here. Assortment of chilies in here which gives it this bright orange color. We're gonna dip our tortillas right inside. It's very hot. Otherwise I would let you. No, please do. Go ahead. Show me the way you can put the cheese on. OK? You're gonna just do a little finger Sprinkle right on top like in the middle or right in the middle. OK. How's that enough or more? OK. Do all three real quick. Yeah, all three. OK. And then what do we have next? We're gonna put our beef on there. OK? We'll put the beef on braised beef right here and the beef is seasoned with. So we have an assortment of chilies, guajillo. Ancho some uh poblano peppers. Jalapeno just do it on one side because we're gonna flip it over. You got it right on that. Yeah. Got that beautiful, perfect. And we gonna fold them over. Looks good. So you want little color, gives it that tortilla. Nice little toasted flavor. We'll have all the plates set up here. So we do um pickled red onions, pickled jalapenos, a cup with the consume in it. It's got a little onion and cilantro in there and a side of our house made chimichurri aioli. So we got a whole plate right there. Of goodness, mix it all together, eat it however you want. At this point, you can churn these out in your sleep. All right. We're gonna see the final product. We're gonna see more food and something to drink as well. That's all coming up.

It is Tuesday and we are showing off another one of the best spots here in New Jersey today. I'm gonna take you to Somerville for tacos margaritas and more at salted lime bar and kitchen. We've made our way back behind the bar. We're with Steve Raucci, the general manager here. It's time to have a drink. Steve. What are we gonna have? Classic margarita? Let's do it. What makes a good margarita? Uh good, good tequila. No additives uh and fresh lime juice. What's the tequila in this case? That's good. It's uh Alto. So Meca, it's from Jalisco, Mexico two ounces of the alto. So Meca OK. We're gonna do an ounce of higher marker, triple sec. OK? We're gonna do an ounce of lime juice. Very nice and some people leave it at that, but we like to add a little bit of sweetness. And what's the sweet in the skin? Nice, fresh 100% agave just to go along with the tequila. You're just gonna do a couple of squirts. Nothing crazy. A little bit ice it up. You wanna make sure it's closed. There you go. My friend ready to go. OK. How are we doing? Ok. Here we go, here we go. I mean, obviously on a busy Saturday night you're selling a ton of these, I imagine. Yeah. So it's a lot of secret. Ok. It's ready. You got a classic salt rim. There. It is very nice, but a lot of people around the area tend to screw it up. We make it perfect here. So pretty simple. Sounds good. All right. We've seen the drink, we've seen how the food is made. We got to taste the food. We're gonna do that next.

It's Tuesday in time for another one of the best spots in New Jersey today. I'm taking you to Somerville for tacos margaritas and more at salted lime bar and kitchen. All right, it's time to eat. We're back with head chef Katie Berry. Tell me what we made here, Katie start with this tuna because I think that's where I'm gonna be getting if you don't mind. So we've got a tuna tataki. It's a seared tuna with some of our house made El Pastor seasoning, served on a bed of house made guacamole with some ponzu sauce, some crispy wonton and scallions. OK? My eyes immediately then go to the burger because I mean, it's hard to take your eyes off this thing. So we've got a smash burger here. It's a Beaver Brook Ranch ground beef seared on our pocha with some cheddar chipotle mayo uh chorizo jam on a toasted brioche bun beef is local. Tell me about that. Yes. So we, we have a partnership with Beaver Brook Ranch. It's a local farm. We get uh one cow from them about every month and we use their beef in a variety of different ways. The birria tacos here are braised, shoulder and, and different cuts. So we've got a braised beef that's marinated for two days in a essentially a chili paste. Uh some different spices, ginger garlic, uh ancho and guajillo chilies and then braised slow in the oven for about 6 to 8 hours and then shredded and we have the, the leftover uh stock on the side. Finally, it's not gonna be my first choice, but a lot of people are gonna want to go for the salad. So we have our, our Somerset Hills Institute, uh, greens. It's a mixture of some different lettuces. It's tossed with a blood orange vinaigrette, uh, topped with some roasted beets, some orange, some goat cheese Friday night. A Saturday night. You got great variety. You got great drinks and a great atmosphere. You gotta check this place out, but now it's time to eat. I don't want to eat alone. So please join me and thank you for having us.
