Ingredients:
1ea. 9in. pie shell (par baked)
3 ea. whole eggs
¼ cup heavy cream
10 ea. ¼ inch rounds of Roma tomatoes
10 ea. ¼ inch rounds of goat cheese
¼ lb. Swiss cheese(shredded)
1 cup baby spinach (rough chop)
Pinch nutmeg
Directions:
1. In a bowl crack the eggs, add the cream, nutmeg and whisk until all are incorporated well.
2. Add the cheese and spinach to the egg mixture and mix until all are incorporated.
3. Pour the mixture into the pie shell and gently flatten the top.
4. Shingle the tomatoes and goat cheese around the top of the quiche, shingling tomato, goat cheese, tomato, goat cheese until you have one slice of goat cheese left over.
5. Place that last slice of goat cheese to the center of the quiche.
6. Bake at 350 deg. For 30 to 35 minutes.
