Crushed, buttery Ritz Crackers give this horseradish-crusted salmon a delicious texture. Crushing the crackers will also help you take out your frustrations after a long day.
Ingredients:
- 2 pieces of salmon (wild or farm-raised)
- 1 cup of sour cream
- 2 tbsp. of butter
- 1/4 cup of horseradish
- 1 tbsp. of whole grain mustard
- 1/8 cup of lemon juice
- 1/4 cup of white wine
- 1 tsp. shallots
- 1 tsp. of chopped parsley
- Ritz Crackers
Instructions:
Sautee shallots with oil. When translucent, add white wine.
Reduce by half and add lemon juice, then reduce and add butter to make sauce. Add salt and pepper to taste.
Mix together sour cream, horseradish, mustard and chopped parsley for crust.
Top salmon fillets with horseradish mixture. Place in oven set to 375 degrees for 15 to 18 minutes. Let crust brown.
