It's time for another delicious food truck! This week, the Island Empanada food truck visited the News 12 Long Island studios!

 

Island Empanada has two restaurants that offer Latin American food and catering in Medford and Ronkonkoma. The food truck is frequently parked at festivals, fairs, carnivals, car shows, and sporting events - but is also available for your special events.

For this week's segment, they made:

Spinach and feta empanada - with spinach, feta, garlic and onions.

Shrimp with mango salsa empanada - with shrimp sautéed with garlic, mango salsa and fresh cilantro.

Traditional chicken empanada - with tender shredded chicken seasoned with secret sofrito sauce - you can add cheese to this too!

Traditional beef empanada with cheese - the truck's best seller! It has seasoned ground beef, a secret sofrito sauce and cheddar cheese.

Later this year, Island Empanada will be opening two more restaurants.
