Chef Giovanni, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Nonna’s Broccoli Rabe.
INGREDIENTS:
2 bu. Broccoli rabe
2 tbs. garlic (chopped)
2 tbs. roasted garlic
¼ cup chicken broth
3 tbs. olive oil
1 tsp. Salt
Pinch black pepper
DIRECTIONS:
1. Place the broccoli rabe on a cutting board and cut a ½ an inch off the bottom of the stems.
2. In a pot of boiling water, submerge the broccoli rabe and cook for three minutes.
3. Remove the broccoli rabe from the boiling water and quickly place in an ice bath.
4. Once cool cut each bunch of broccoli rabe into three and set aside.
5. Heat the olive oil in a sauté pan on medium to high heat.
6. Add the chopped garlic and cook until it starts to get golden brown.
7. Add the broccoli rabe to the sauté pan and cook for one minute.
8. Add the roasted garlic to the sauté pan and smash them using a spoon.
9. Add the salt, pepper, chicken broth and cook for two minutes.
10. Remove from heat and serve.
