Chef Giovanni Ruggerrio, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Italian potato salad.

INGREDIENTS:

3 lb. red potatoes
½ lb. green beans
1 cup red onion (sliced)
¼ cup capers
½ cup cherry tomatoes (halved)
½ cup red vinegar
¼ cup olive oil
1 tsp salt
½ tsp black pepper
Pinch of oregano

DIRECTIONS:

Peel the potatoes and place in a pot of cold water on high heat and cook until tender.
Once tender remove from water and cool.
When the potatoes are fully cooled proceed to cut into ½ inch cubes and set aside.
Clean the green beans by clipping the ends off and cook in salted boiling water for about 3 minutes.
Once the beans are cooked, immediately remove them from the boiling water and place in an ice bath. (this will help keep the vibrant color of the beans)
In a bowl add all the ingredients and mix until all are incorporated
