Stephanie Coughlan, of The Village Cheese Shop Café in Mattituck, shows News 12's Lily Stolzberg how to make fondue truffle mac and cheese.
Recipe (Serves 2):
Ingredients:
1 Cup White wine
1 tsp Diced garlic
8 oz shredded cheddar cheese
1 tsp granulated garlic
Salt and pepper to taste
2 tbs corn starch
1 tbs chopped black truffle
1 tbs truffle oil
8 oz cooked shell pasta
Chopped parsley or scallions
Shredded cheese
Instructions:
-Turn burner on medium
-In a pot, add the chopped garlic. Let the garlic cook until it is toasted.
-Add wine and bring it to a high simmer. Adjust the burner if needed.
-In a mixing bowl, combine cheese, corn starch, salt, pepper and granulated garlic.
-When the wine is simmering, add the cheese mixture a little at a time while stirring constantly.The mixture should be thick and coat the spoon. If not add, a slurry.
-Add the pasta and stir until coated.
-Add truffle and truffle oil. Stir until evenly combined.
-Pour into serving bowl and sprinkle some cheese and parsley or scallions on top for garnishes.
