Chef Vinny, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Caesar Salad Schiacciata.
Ingredients:
1 Schiacciata Bread
2 chicken cutlets
1 head romaine lettuce (cut in to ribbons)
2 egg yolks
¾ cup extra virgin olive oil
4 anchovies, chopped
½ tbs dijon mustard
1 tsp worcestershire sauce
2 cloves garlic minced
1 tbs fresh lemon juice
¾ cup freshly grated parmesan
½ tsp black pepper
Instructions:
1. Chop the anchovies and garlic together until a smooth paste forms and set aside.
2. In a bowl whisk egg yolks, then add mustard.
3. Whisk the egg yolks and Dijon mustard until smooth.
4. Whisk the anchovy-garlic paste into the egg yolks until combined.
5. Continue whisking while slowly pouring in the freshly squeezed lemon juice.
6. Whisk in the olive oil, slowly while whisking vigorously.
7. Once all of the oil has been added, keep whisking for another minute to thicken.
8. Whisk in Parmesan cheese, then taste and season with freshly ground black pepper.
9. Toss the lettuce with your desired amount of dressing.
10. Cut Schiacciata bread in half.
11. Spread one tbs. of dressing on both sides of the bread.
12. Place half of the Caesar salad mix onto the bottom of the bread.
13. Place the chicken cutlets onto the salad mix.
14. Place the remainder of the Caesar salad mix onto the chicken cutlet.
15. Place the top half of the bread onto the sandwich.
16. Cut in half and serve.
