Every Wednesday before Easter, dozens of people get together to eat, drink and prepare horseradish in Riverhead.
Participants peeled, scraped and chopped roots during the Horseradish Festival until they were ready to be processed with lemon juice and vinegar. 
The horseradish is then ready to be used with kielbasa and venison, which were ready for the taking.
The event was started by a handful of friends and has attracted thousands of guests over the years.
Horseradish is one of the first crops to come out of the ground at East End farms in the spring.
Horseradish is grown at Schmitt's Family Farm in Riverhead. For decades, they supplied Gold's Horseradish Company and now they produce their own line.
