An Islip diner is treating Long Islanders to its annual Pancake Week.The Oconee East Diner has held the event for the last several years. It coincides with IHOP's National Pancake Day. Bill Thompson, the diner's chef, says the event is always a hit. The diner's customers are able to order pancakes with whatever ingredients they want.Some of the most common requests, according to Thompson, are banana, blueberry, chocolate chip and coconut. Thompson says the most unique request was for pancakes with lox.At IHOP locations across the Island and the rest of the country, customers are able to get a free short stack Tuesday between 7 a.m. and 10 a.m. In return, the restaurant asks for a donation to support children's hospitals through the Children's Miracle Network or other charities.Related information: IHOP
