Chocolate Peanut Butter Cups

Recipe courtesy of "The Earth Diet" by Liana Werner-Gray
Total time: 35 minutes
Ingredients:

3/4 cup of cacao butter (Liana says you can use organic coconut oil/butter instead.)

3 tbs of cacao powder

1/2 cup of almond meal

3 tbs of maple syrup or honey

13 tsp of raw peanut or raw almond butter

13 mini sized paper baking cups
1. Melt the cacao butter over a very low heat on your cook top. Once melted add the cacao powder, almond meal and maple syrup, mixing well. Add more cacao if you like a richer chocolate taste and more maple syrup if you want it sweeter.
2. Spoon a tsp of the mix into the baking cups, filling it one third of the way. Reserve the rest of the mix for the top of the cups.
3. Put the baking cups in the freezer for 5 minutes to set.
4. Remove the cups from the freezer and add about 1 tsp of peanut butter to each one. Each cup should now be two thirds full.
5. Add 1 1/2 tsp of the remaining chocolate mix into the baking cups.
6. Place the cups in the freezer again, and allow to set for 15 minutes.
