Stromboli Dough Recipe & Stromboli Assembly
· 1-1/2 cup of water
· 3-1/2 cups of flour
· 1 tablespoon of salt
· 1 teaspoon of sugar
· 2 tablespoons of olive oil
· 1 packet of dry yeast
· Yields 4-10oz dough balls
· 3/4 cup diced fried chicken cutlet (5oz)
· ¼ cup of pizza sauce (2oz)
· ¼ cup of shredded mozzarella (2oz)
· 2 tablespoons of grated Pecorino Romano cheese (1oz)
· Sesame seeded (optional)
· 3/4 cup diced meatballs (5oz)
· ¼ cup of pizza sauce (2oz)
· ¼ cup of shredded mozzarella (2oz)
· 2 tablespoons of grated Pecorino Romano cheese (1oz)
· Sesame seeded (optional)
· 3/4 cup diced fried eggplant (5oz)
· ¼ cup of pizza sauce (2oz)
· ¼ cup of shredded mozzarella

· 3/4 cup sliced pepperoni (5oz)
· ¼ cup of pizza sauce (2oz)

After 10oz doughs have rested, stretch to 8inch by 4inch rectangle, place filling in center of dough end to end and fold over.
Place in baking pan with pan liner, egg wash and score 4 times to release steam pocket so there is no air cavity.
Optional: sprinkle sesame seeds on top.

25 to 30 Minutes at 350*
