Chef Giovani, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Italian Chopped Salad.

INGREDIENTS:

1 cup. chickpeas

¼ lb. golfetta salami (sliced thin and cut into ribbons)

3 ea. stem on artichokes (sliced)

½ red onion (sliced)

¼ cup sundried tomatoes (sliced)

1 head romaine (sliced)

1 head iceberg lettuce (sliced)

1 cup olive oil

¼ cup red wine vinegar

2 tbs honey

2 tbs dijon mustard

½ tsp salt

¼ tsp black pepper

½ cup Parmigiano Reggiano

DIRECTIONS:

1. Start by making the dressing. Add the dijon mustard, honey and red wine vinegar to a bowl and whisk until blended.

2. Add the oil slowly while whisking.

3. Add the salt, pepper, cheese and whisk until all the cheese is blended and the dressing has emulsified.

4. Place the chickpeas in a small bowl, add 3 tbs. of dressing, mix well and set aside.

5. Place all the lettuce in a mixing bowl and add half of all remaining ingredients including half the chickpeas.

6. Add the dressing and toss.

7. Top the salad with the remaining ingredients
