Chef Vinny Olivieri, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make roasted Sicilian-style wings.
Ingredients:
For the caramelized onions:
3 large sweet onions, sliced
¼ lb. butter
¼ cup brown sugar
1 clove garlic minced
1 tbs. salt
1 tsp. black pepper
Instructions:
Pre-heat a large sauté to medium heat then add butter, onions, salt and pepper.
Sautee onions for 30 minutes and stir constantly to prevent burning, then add garlic and brown sugar.
Sautee for an additional 10 minutes, stirring often. Remove onions from pan and allow to cool.
For the wings:
3 lbs. chicken wings
12 cloves of garlic, sliced
3 tbs. crushed red pepper
¼ cup extra virgin olive oil
1 tbs. salt
1 tsp. black pepper
Juice of ½ lemon
¼ cup chopped parsley for garnish
Instructions:
Preheat oven to 425 degrees F and pat wings dry with paper towel.
In a large mixing bowl toss together wings, garlic, crushed red pepper, olive oil, salt and pepper.
Place seasoned wings onto large baking sheet then roast wings for 20 minutes.
Rotate tray and flip wings to achieve even browning on both sides, then roast for additional 10 minutes.
Remove wings from oven and immediately toss wings with caramelized onions, chopped parsley and splash of lemon juice.
Add more crushed red pepper if you like the heat. Plate and serve.
