An author and food historian was whipping up a feast at the court house in Mineola Thursday.
Dr. Libby O'Connell, from the History Channel, has recipes that go back as far as the 17th century. She began writing and researching for her book, "The American Plate, A Culinary History in 100 Bites" two years ago.
Bite No. 34 on that list is Brunswick Stew. It contains some rabbit, bacon, chicken and whatever else happened to be caught that day.
"The recipe actually calls for squirrel, but in the book it calls for rabbit as a substitute," O'Connell told News 12.
Her book is currently being sold in stores and online.
