Chef's Quick Tip: Mexican Waffles

Mexican waffle

Batter:
1⁄2 tub Ricotta cheese
9 Eggs
6oz Melted butter2 1⁄4 tbs Baking powder
3 cups Flour
3⁄4 cup Sugar

In a bowl mix baking powder, sugar, and flour.
In a separate bowl mix eggs, and butter.
Combine all together then add cheese and fold it until dissolved.

4 Eggs1 pc chopped Mexican sausage Bacon4 slices bacon1 tsp honey or agave1/2 avocado.

Put pancake batter in the waffle maker to cook for 2 min.
In a pan cook chorizo then add the scrambled eggs.
Put bacon slices on a tray, add honey or agave, then cook in oven for 3-5 min at 400 degrees.
Take waffle out of the maker, put scrambled chorizo eggs over it , top with bacon slices and avocado.
