Homemade Tomato Soup
Ingredients:
2 chopped onions
2 cans Marzano tomatoes
1 cup heavy cream
First heat a soup pot over medium/high heat. Once it's hot, add the olive oil and 2 chopped onions. Stir the olive oil and onions for about 5 minutes until the onions become translucent not brown. Next add 2 cans of Marzano tomatoes and cook for about 10 minutes over medium to medium-low heat. Once tomatoes start bubbling adjust the heat. You don't want the soup to reduce too much and become too thick, and lose its moisture. Then pour in 1 cup of heavy cream to make it taste like a classic cream of tomato soup. Once you stir in the heavy cream, the soup is ready to be blended.
