What's Cooking: Spaghetti muffins

Chef Vinny Oliveri, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make spaghetti muffins.

Ingredients:
1lb. Spaghetti cooked
¼ lb. Shredded provolone
¼ lb. grated pecorino
¼ lb. Shredded mozzarella
4 Eggs
½ lb. Ground beef
½ cup onion (sm dice)
16 oz. Marinara sauce
16 oz. Italian seasoned bread crumbs
½ cup oil
Directions:
In a sauté pan, add onions and cook until translucent. Add ground beef and cook until brown. Strain all excess fat.

In a bowl add all ingredients, reserving two ounces of bread crumbs. Mix until all is well incorporated.
Using pan spray, spray the muffin pans. Make a 6 oz. ball of the mix and stuff the muffin pan until all the mix is used.
Top with a sprinkle of bread crumb and cook at 350 degrees for 30 min. Let cool and serve.
