What's Cooking: Shrimp and calamari salad
2 lbs. calamari
1 lbs. shrimp (21/25)
1 red pepper
1 yellow pepper
1 red onion
½ bunch celery
2 tbs chopped garlic
2 tbs parsley
1 tsp oregan
1 cup olive oil
1 tsp black pepper
1 tbs salt
Remove the cuttle bone and the tentacles from the mantle. Cut calamari mantle into rings, steam, cool and set aside. Steam and cool the tentacles and set aside.
Steam shrimp, cool and set aside.
Cut peppers into strips and set aside.
Cut red onion julienne and set aside.
Cut celery into half moons and set aside.
In a mixing bowl, add all ingredients toss and serve.
