This week, Joe Cordaro, of Roast Sandwich House in Melville, shows News 12's Lily Stolzberg how to make butternut squash bisque.
Ingredients:
1 cup carrot
1 cup onion
1 cup celery
4 butternut squash peeled,diced
2 oz white sugar
2 oz maple syrup
3 cups vegetable stock
½ cup heavy cream
Salt/pepper
Tbsp allspice
3 cinnamon sticks
2 oz apple vinegar
Recipe Instructions:
Sauté butter and vegetables in sauce pan, cook on low for 5 minutes. Add vegetable broth, sugar & spices. Simmer on low for 30 minutes until the squash is tender. Add cream, cook additional 5 minutes. Blend smooth with blender, add maple syrup & apple vinegar. Season to taste.
