Ingredients:
1 rack American Lamb Chops (8 chops)
½ cup extra virgin olive oil
1 tbs whole grain Dijon mustard
3 cloves garlic, peeled, smashed and sliced
2 sprigs fresh rosemary
3-4 sprigs fresh thyme
2 sprigs fresh mint chopped
1 lemon
½ tbs kosher salt
½ tsp black pepper
Directions:
Cut lamb into double chops, place in large mixing bowl.
Add sliced garlic.
Chop half of the rosemary add to bowl, pick remaining rosemary, add to bowl.
Add full sprigs of thyme and chopped mint to bowl.
Squeeze lemon, add peel to bowl.
Add olive oil, whole grain mustard, salt and pepper, mix well, cover and marinade 2-12 hours.
Grill lamb on all sides. Lamb should be cooked to rare 125F degrees.
Remove from grill.
Garnish plate with grilled halves of garlic, grilled lemon slices and fresh herbs.
