What's Cooking: Uncle Giuseppe's Marketplace Grilled sesame chicken over butternut squash hash

DJ Chef shows News 12's Lily Stolzberg how to make grilled sesame chicken over butternut squash hash.
DJ Chef's Grilled Sesame Chicken:
Serves 4
Ingredients:
4 medium-size chicken breasts, pounded out lightly to even out
½ cup Soy sauce
3 Garlic cloves (peeled & crushed)
¼ cup rice wine vinegar
2 Tablespoons honey
1 tablespoon fresh ginger root (peeled & grated)
4 scallions chopped
2 tablespoons toasted sesame oil
1 teaspoon toasted sesame seeds
Garnish black & white sesame seeds, chopped scallions & small diced red peppers.
Directions:
Add chicken & all ingredients in a ziplock bag and marinate for 30 to 60 minutes. Take out of the fridge 20 minutes before you start cooking. Preheat grill. Grill 6 minutes per side or until chicken is fully cooked. Use garnishes when plating.

DJ Chef's Butternut Squash Hash:
Serves 4
Ingredients:
1 large Buttner Squash, Peeled, Small diced
1 Medium Onion, diced
2 Garlic cloves, minced
1 Tablespoon cinnamon
½ Cup Lite Brown Sugar
2 teaspoons fine sea salt
1 tsp white pepper
½ cup Vegetable Oil
½ Stick of Butter
Directions:
Heat oil in a large nonstick pan. Add squash & onion. Cooked 10 minutes or until lightly browned. Add butter, garlic, cinnamon,sugar, salt & pepper. Lower the heat, mix & cook another 10 minutes or until the squash is soft and some pieces become mashed.
