Recipe for Paleo Pancakes
1/3 TO 1/2 cup of cassava, tiger nut, almond or coconut flour (or a mix of the two)
Pinch of Salt
Vanilla, or maple extract
1 tsp of aluminum-free baking power
- Add water or a non-dairy milk if needed
- Mix in blender or hand blend and leave the bananas a little lumpy for a flavor surprise.
- Ripe bananas are sweeter and hopefully will mean there's no need for additional sweetening - although organic maple syrup and organic honey are allowed on a Paleo diet.
