Some business owners fear minimum wage hike will hurt bottom line

Some business owners worry Connecticut’s minimum wage hike will impact their bottom line.
Chef Jay Leblanc, owner of Knot Norm's Catering Company in Norwalk, isn’t looking forward to the increase. Leblanc has been running his restaurant on First Street with a small staff of roughly a dozen employees a day.
The waitstaff are tipped workers and won’t be affected by the increase to $15 an hour. But Leblanc’s cooks and dishwashers make minimum wage and will have their pay raised as a result of the hike. Leblanc says doing so would not be profitable for him as a small business owner.
“We all want our chefs to make more money,” he says. “I think they deserve to make more money. But the entry level positions like dishwashers, line cooks - that's eventually going to be eliminated or cut, and it will just put more workload on our higher paid employees."
The owner says tipping kitchen staff might be a possible solution, but that's not currently allowed in the state.
